This… This is my favorite. Hands down. I had no idea until a few days ago that I could use cauliflower as a rice substitute, but as a carb avoider, it has already revolutionized my life. Gone are the days of trying to discreetly scoop up delicious gravy with my spoon. Gone are the days of eating gumbo straight (not that it’s bad, but a little rice is always better). The best part is that truly I cannot tell a difference between this and the “real thing.” It serves exactly the same purpose in exactly the same fashion, but it’s much, MUCH healthier.
A while ago I began to see the beauty in homemade sandwich bread: it’s healthier; it’s cheaper; and it tastes better. Plus, it’s fun to make! Excited to try my hand at it, I searched for a good wheat bread recipe, tried a few duds, and then stumbled upon one that had promise… but it still wasn’t right. So I tweaked and tweaked and tweaked some more until it was perfect. A couple months back I was scrolling through Pinterest and saw a pin of a lasagne that uses zucchini as the pasta. I thought to myself, “Huh. That’s a neat idea. I’ll have to try that someday.” Well, since I didn’t repin it and therefore couldn’t find it (google shows a few recipes for similar lasagnes, but I don’t know which I saw), I just made up my own version.
